in a dutch oven, brown:
1-1 1/2 pounds of stew beef
1 large onion, medium dice
add:
4 cups water
1 Tbs lemon juice
1 tsp worcestershire sauce
1 clove garlic, minced
2 bay leaves
1 Tbs salt
1 tsp sugar
1/2 tsp each pepper and paprika
dash of allspice
while that's stewing, cut up:
4 large potatoes into 1" cubes
4 carrots into 1 1/2" pieces, then into "pillars" that are longer and thinner than they are wide
4 parsnips cut like carrots (see above)
add veggies to meat and onion. cook til done, adding more water to cover, if necessary.
when cooked, combine 2 Tbs cornstarch w/ 1 cup cold water. add to broth to thicken it.
remove both bay leaves. allow stew to cool sufficiently and serve.

bulgur-rice pilaf
in a medium saucepan, cook:
1/3 cup sliced almonds in
1 Tbs butter
for 5-6 minutes on low heat til toasted.
remove almonds from pan.
to same pan add:
1 Tbs butter
1 cup fresh sliced mushrooms
1/4 cup sliced green onions
saute 3-4 minutes.
add:
2 cups chicken broth
1/2 cup white rice
1/2 cup bulgur
1/4 tsp thyme
bring to a boil. reduce heat. cover and simmer 15 minutes.
remove from heat and let stands for 10 minutes.
stir in toasted almonds and serve.
serves 6

pumpkin oatmeal cookies
these taste like old-fashioned oatmeal cookies, but with whole wheat pastry flour and pumpkin puree added, they're even healthy for you!
preheat oven to 350 degrees
spray 2 cookie sheets w/ non-stick spray
in a large bowl, mix:
2 cups whole wheat pastry flour
1 1/3 cups old-fashioned oats
1 tsp baking soda
3/4 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
in a medium bowl, mix:
1 2/3 cups sugar
2/3 cup canola oil
2 Tbs molasses
1 cup pumpkin puree
1 tsp vanilla
add wet ingredients to dry and combine.
fold in:
1 cup pecan pieces (if you live near rooster brothers in ellsworth, substitute their maple-ginger roasted pecans instead...you won't be sorry! just break them into little pieces by hand)
1/2 cup raisins (optional...my friends all say they're perfect without and not to change a thing)
drop by tablespoons, 1" apart on cookie sheet.
bake 16 minutes at 350 degrees. cool slightly before removing from cookie sheets.

sesame kale salad w/ peanut dressing
in a large bowl, add:
1 bunch kale...just the leaves, torn into little pieces
1/2 red bell pepper, sliced into little pieces
2 carrots, grated
in a cast iron pan, toast:
several tablespoons of sesame seeds til light brown
then toast:
1/4 cup slivered almonds til light brown
add seeds and almonds to vegetables once cooled
for dressing, whisk in a small bowl:
1/2 cup creamy peanut butter
1 1/2 Tbs rice vinegar
1 T soy sauce or tamari
1 Tbs sesame oil
1/4 cup water (additional if needed to thin dressing)
toss veggies, seeds and nuts w/ dressing til well combined. enjoy!

1/2 tsp cloves
1/2 tsp ginger
mix dry ingredients into the wet ingredients.
stir in:
1/2 cup raisins
1 cup chopped walnuts
til just blended.
pour into the prepared pans. bake for 50-55 minutes til toothpick comes out clean.

annie's "plus"....15 minute dinner
take two family sized boxes of annie's shells and cheese
cook according to directions (i use soymilk instead of milk)
while the pasta's cooking, saute:
1 large onion, chopped medium or small dice
when it's cooked, add:
1 pkg veggie crumbles (hamburger substitute)
mix the onion and "veggie burger" into the prepared shells and cheese
serve w/ a frozen vegetable and dinner's ready in 15 minutes
because the veggie burger keeps well in the fridge, this is an easy meal to keep on hand for one of those nights when you don't have time to cook. leftovers are good for lunch the next day.

beef barley stew w/ sweet potatoes
in a large pot, heat:
2 Tbs canola oil
over high heat.
add:
2 1/2 lbs stew beef
in batches. cook until browned (4-5 minutes), stirring occasionally.
remove beef from pot; set aside.
add:
2 onions, halved and thinly sliced
6 cloves garlic, minced
cook til softened (8-10 minutes)
sprinkle with:
2 tsp dried sage
1/2 tsp pepper
1 1/2 tsp salt
add reserved beef and
2 cans beef broth plus
2 cups water
bring to a boil.
stir in:
2 sweet potatoes, cut into chunks
1 cup uncooked barley
reduce heat to low.
cover. simmer til beef and barley and sweet potatoes are tender, about 1 1/2 hours.

ginger soft drink
this recipe is from "sundays at moosewood"...another cookbook i recommend. the recipes are divided into chapters based on where in the world the recipe originated. each chapter is introduced by someone familiar with the culture writing about its cooking traditions and their personal connection to that culture. reading this cookbook is like taking many small, culinary vacations. this recipe is from the chapter on "africa south of the sahara."
in a large nonreactive pot or bowl (glass, enamel, stainless steel), add:
1 cup grated peeled fresh ginger root
1 cup sugar
2 tsp whole cloves
4 cinnamon sticks
pour:
6 cups boiling water
over the top. cover and set aside in a warm place, in the sun if possible, for an hour.
strain the liquid through a fine metal sieve.
add:
1/2 cup fresh lime juice (lemon is okay, but we prefer lime)
1 cup orange juice
8 cups cool water
set aside in a warm place for another hour or so.
gently strain the liquid again. take care not to disturb the sediment at the bottom.
serve warm, chilled, or on ice.
we like it mixed w/ seltzer water as homemade ginger ale.
store in the fridge in a non-reactive container (like a glass jar).

1/2 cup peanut butter (room temp)
add wet ingredients to dry. fold in:
1 cup semi-sweet chocolate chips
1/3 cup chopped roasted, unsalted peanuts
greased 9" pan (round or square). 350 degrees. 25-30 minutes til golden on top and knife comes out clean of batter (but not necessarily chocolate).
cool to room temperature or just warm. cut into wedges or squares and serve.

4 eggs, beaten
blend well

crab cakes w/ orange shallot sauce
this is what henri and i have almost every year for our anniversary dinner. i double the recipe for the sauce so we can have some to put over our steamed brown basmati rice and over our carrots (cooked, w/ salt and pepper). the recipe is from the cookbook "beat this!" by ann hodgman. her cookbooks are the funniest i've ever read, and i highly recommend any of them. please note that unlike my other recipes, this one is high in fat due to the sauce. that's why this is a special occasion, once a year recipe for us. i've also made the crab cakes in mini bite-sized for large get togethers and served the sauce in a bowl for dipping. big hit!
crab cakes:
1 cup breadcrumbs (i use store bought, plain)
2 large eggs, lightly beaten
1/4 cup mayo (i use hellman's light)
1/4 cup minced onion
1 large clove garlic, minced
4 Tbs minced fresh parsley (i cheat and use dried, smaller amount)
1/2 tsp salt
1/4 tsp dry mustard
1/4 tsp cayenne
1 lb fresh crabmeat
mix the above. form into 4 patties. dredge in flour. pan fry in hot oil (2 Tbs or so of canola) til golden brown. keep warm in a 200 degree oven while you make the sauce (or do what i do and make the sauce first up until the point where it only needs the butter and cream whisked in...that part needs to be done at the last minute).
orange shallot sauce (double this, if you're smart!)
in a saucepan, boil:
2 minced shallots
1/4 cup orange juice concentrate
1/4 cup white wine
til reduced to 1/4 cup
using a wire whisk, whisk in
1/2 stick butter, cut into bits
til it's all absorbed. it'll be about the consistency of mayonaise.
remove from heat.
whisk in:
1/4 cup heavy cream (i use light cream and it's fine)
serve the sauce over the crabcakes (and your steamed rice and carrots). indulge.

1 cup breadcrumbs (i use store bought, plain)
2 large eggs, lightly beaten
1/4 cup mayo (i use hellman's light)
1/4 cup minced onion
1 large clove garlic, minced
4 Tbs minced fresh parsley (i cheat and use dried, smaller amount)
1/2 tsp salt
1/4 tsp dry mustard
1/4 tsp cayenne
1 lb fresh crabmeat
mix the above. form into 4 patties. dredge in flour. pan fry in hot oil (2 Tbs or so of canola) til golden brown. keep warm in a 200 degree oven while you make the sauce (or do what i do and make the sauce first up until the point where it only needs the butter and cream whisked in...that part needs to be done at the last minute).

8 oz fresh mushrooms (baby bellas work well, or stuffing mushrooms)

get out your blender
fill it 1/3 full with frozen whole strawberries
add a ripe large banana
add "amazing mango smoothie" by bolthouse farm til blender looks half full
add a packet (or two) of vanilla carnation instant breakfast
fill the rest of the way with silk soymilk
blenderize on high speed til well mixed. pour and serve.

pumpkin pecan muffins
This recipe comes from the cookbook Food to Live By, written by Myra Goodman (owner of The Earthbound Organic Farm). I have loved every recipe I've tried from it and recommend purchasing it so you have all her healthy, delicious recipes.
makes 15 muffins, so you need 2 muffin tins...either two 12 cup ones (leave the ones you don't need to fill bare) or a 12 cup tin plus a 6 cup tin (leaving the one remaining spot bare). likewise, you can bake these in 2 batches if you only own one muffin tin.
preheat oven to 375 degrees.
mix the streusel topping in a medium bowl:
1/3 cup all purpose flour
1/3 cup packed brown sugar
1/4 teaspoon ground cinnamon
4 Tbs cold butter, cut into small pieces
using a pastry blender, two forks or your fingers, blend the above til it's crumbly and combined.
mix the dry ingredients in a large bowl:
1 2/3 cups all purpose flour (i use whole wheat pastry flour for at least a cup of it)
1 Tbs baking soda
1/2 tsp salt

whole wheat carrot-pineapple cake
this recipe doubles easily...good thing, too! cream cheese frosting recipe follows.
preheat oven to 350
spray round cake pan w/ non-stick spray
dry ingredients:
1 1/2 cups whole wheat pastry flour
3/4 cup sugar
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
combine wet ingredients in separate bowl:
2/3 cup applesauce
2 eggs
1/2 cup crushed pineapple w/ the juice as well as the pineapple
1/2 tsp vanilla
1/2 tsp almond extract
combine wet w/ dry ingredients til just blended. fold in:
1 cup grated carrot (i just use one large-ish one)
good handful of walnut pieces
good handful of raisins
bake for 30-35 minutes. check w/ a toothpick for doneness.
does not need frosting...very moist and densely delicious!

1 cup grated carrot (i just use one large-ish one)
good handful of walnut pieces
good handful of raisins
bake for 30-35 minutes. check w/ a toothpick for doneness.
does not need frosting...very moist and densely delicious!
cream cheese frosting recipe (enough for one layer cake)
in a medium bowl, cream:
4 oz cream cheese
3 Tbs unsalted butter
add and combine gradually (one cup at a time):
3 cups confectioners sugar
add the juice of half a lime and mix well

blueberry crisp
preheat oven to 375 degrees
grease a 9 x 13 pan
fill pan 2/3 full of blueberries, fresh or frozen
in a bowl mix:
1 cup brown sugar
1 cup whole wheat pastry flour
1 cup old fashioned oats
1 1/2 tsp cinnamon
1 1/2 tsp nutmeg
2/3 cup butter (i grate cold butter, then mix it in)
spread filling evenly over the top of the berries

whole wheat quick bread
1/2 cup all purpose white flour
1 1/2 cups whole wheat flour
1 tsp baking powder
3/4 tsp baking soda
pinch of salt
mix above ingredients in a medium sized bowl. make a well in the center.
stir together:
1 cup of buttermilk
1/3 cup honey
1 Tbs melted (cooled) butter or margarine
1 egg, slightly beaten
add to dry ingredients and stir til just blended
spray an 8" round baking pan w/ non-stick spray and dust it w/ flour. turn the batter into the pan. bake 35 minutes at 350 degrees. turn bread out onto a rack to cool. cut into 8 wedges.

an onion, chopped
12 oz veggie crumbles ground beef substitute
2 tsp soy sauce
2 cloves minced garlic
saute til onion is translucent
add:
28 oz can of crushed tomoatoes
1 cup water
2 cans of drained red kidney beans
1 cup whole kernel corn (frozen is fine)
1 large sweet potato (3/4 lb) cut into small chunks (i usually boil it separately, then add it, so the chili cooks faster)
optional: i also like to add a small can of stewed, diced tomatoes
stir well to combine. simmer til sweet potato is cooked and all the ingredients are well heated.

sprinkle of nutmeg

use scant 1/4 cup of batter per pancake. makes about 8-10 pancakes.
these deserve real maple syrup...esp warm maple syrup!

rainbow swiss chard fried rice w/ garlic scapes
steam 1 cup of basmati brown rice. set aside.
heat up enough canola oil to cover bottom of cast iron dutch oven.
saute a vidalia onion as well as 1/4" slices from about 4 garlic scapes (up to the flower bud part)
add 3 beaten eggs to the above and cook til done, along w/ 1 Tbs soy sauce or tamari
add chopped rainbow swiss chard, about half a pound of it
option: you can also add 4 cooked carrots, sliced into small bite-sized chunks
add cooked basmati rice, then a another Tbs soy sauce or tamari
stir in about 1 Tbs of hoisin sauce and a 1/2 tsp of ground ginger and mix well

homemade citrus iced tea...divine
squeeze 4 lemons and 2 oranges. set the juice aside.
cut the rinds into small pieces and put them in a big pot.
cover w/ 4 cups of water and simmer 10 minutes til the juice is out of the peels.
add 2 cups of sugar and stir til it's dissolved.
add 4 Tbs of loose tea.
remove the pot from the heat and steep several minutes.
strain. i use a fine mesh metal strainer.
add the orange and lemon juice plus 8 cups of water.

then dump a large can of bush's baked beans over that (original flavor is good)
cover all the above w/ a pkg of grated mexican cheese
bake at 350 for 15-20 min. til cheese is well melted
serve over triple heart lettuce mix...the colors look better & besides, it's good for you
put a dollop over low-fat sour cream on top and you're good to go

sesame peanut noodles
cook 1 lb thin spaghetti, drain and rinse in cold water. i use the ronzoni healthy harvest brand for extra fiber and really like it. set aside.
whisk together:
4 Tbs peanut oil
4 Tbs peanut butter
4 Tbs soy sauce
2 tsp toasted sesame oil
2 Tbs light brown sugar
2 tsp minced fresh ginger (or equivalent ground)
1-2 pinches of crushed red pepper
toss w/ spaghetti. sprinkle w/ sliced green onions (1 bunch), 2 grated carrots and 1/4 cup of chopped, unsalted peanuts. this is one recipe i could live on and not get bored of eating it.

chocolate tofu pie
procure one of those already made graham cracker crusts
in your microwave, melt a 12 oz bag of good chocolate chips (i use ghiradelli dark chocolate)
in your blender, put a 1lb tub of silken tofu that's cut into big chunks
add the melted chocolate chips to the blender as well
add a capful of real vanilla
blenderize w/ the cover on til it's all mixed well...this takes a bit of occasional stirring
pour into the graham cracker crust and refrigerate at least an hour
