whole wheat carrot-pineapple cake

this recipe doubles easily...good thing, too! cream cheese frosting recipe follows.

preheat oven to 350
spray round cake pan w/ non-stick spray

dry ingredients:
1 1/2 cups whole wheat pastry flour
3/4 cup sugar
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt

combine wet ingredients in separate bowl:
2/3 cup applesauce
2 eggs
1/2 cup crushed pineapple w/ the juice as well as the pineapple
1/2 tsp vanilla
1/2 tsp almond extract

combine wet w/ dry ingredients til just blended. fold in:
1 cup grated carrot (i just use one large-ish one)
good handful of walnut pieces
good handful of raisins

bake for 30-35 minutes. check w/ a toothpick for doneness.
does not need frosting...very moist and densely delicious!

cream cheese frosting recipe (enough for one layer cake)

in a medium bowl, cream:
4 oz cream cheese
3 Tbs unsalted butter

add and combine gradually (one cup at a time):
3 cups confectioners sugar

add the juice of half a lime and mix well
spread over cake once completely cooled
