steam 1 cup of basmati brown rice. set aside.
heat up enough canola oil to cover bottom of cast iron dutch oven.
saute a vidalia onion as well as 1/4" slices from about 4 garlic scapes (up to the flower bud part)
add 3 beaten eggs to the above and cook til done, along w/ 1 Tbs soy sauce or tamari
add chopped rainbow swiss chard, about half a pound of it
option: you can also add 4 cooked carrots, sliced into small bite-sized chunks
add cooked basmati rice, then a another Tbs soy sauce or tamari
stir in about 1 Tbs of hoisin sauce and a 1/2 tsp of ground ginger and mix well
