whole wheat quick bread

1/2 cup all purpose white flour
1 1/2 cups whole wheat flour
1 tsp baking powder
3/4 tsp baking soda
pinch of salt
mix above ingredients in a medium sized bowl. make a well in the center.

stir together:
1 cup of buttermilk
1/3 cup honey
1 Tbs melted (cooled) butter or margarine
1 egg, slightly beaten
add to dry ingredients and stir til just blended

spray an 8" round baking pan w/ non-stick spray and dust it w/ flour. turn the batter into the pan. bake 35 minutes at 350 degrees. turn bread out onto a rack to cool. cut into 8 wedges.

dani's pumpkin chocolate chip cookies

1 stick softened butter
1 cup applesauce
beat til smooth

1/2 cup sugar
1/2 cup brown sugar
add to above and beat til light and fluffy

2 large eggs
beat in one at a time

1 tsp vanilla
1 can pumpkin puree
add to above as well

dry ingredients:
3 cups whole wheat pastry flour
2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
1/4 tsp cloves
1/4 tsp allspice
add a third of above to wet ingredients, mix in. add another third and mix, then the last third.

stir in:
12 oz of dark chocolate chips

drop by heaping tablespoons onto a cookie sheet sprayed w/ nonstick spray. bake 15-20 minutes or until cookies are brown around the edges. let rest on sheet for 2 minutes before removing w/ spatula.

candy's vegetarian chili

3 Tbs extra virgin oil oil
1 1/2 tsp chili powder
1 tsp salt
3/4 tsp cinnamon
3/4 tsp coriander
3/4 tsp cumin
1/2 tsp crushed red pepper flakes
1 tsp curry powder
saute the above spices in the oil over medium high heat in a cast iron dutch oven til fragrant

add:
an onion, chopped
12 oz veggie crumbles ground beef substitute
2 tsp soy sauce
2 cloves minced garlic
saute til onion is translucent

add:
28 oz can of crushed tomoatoes
1 cup water
2 cans of drained red kidney beans
1 cup whole kernel corn (frozen is fine)
1 large sweet potato (3/4 lb) cut into small chunks (i usually boil it separately, then add it, so the chili cooks faster)
optional: i also like to add a small can of stewed, diced tomatoes

stir well to combine. simmer til sweet potato is cooked and all the ingredients are well heated.

a.m. delight muffins

preheat oven to 375
grease a muffin tin

2 cups whole wheat pastry flour
3/4 cups sugar
2 tsp baking soda
1 1/2 tsp ground cinnamon
1/2 tsp salt
combine above and set aside

3 eggs, beaten
1/2 cup canola oil
1/2 cup milk or soymilk
1 1/2 tsp vanilla extract
combine. add to dry ingredients.

fold in:
2 cups chopped peeled apples
2 cups grated carrots
1/2 cup flaked coconut
1/2 cup raisins
1/2 cup pecans, chopped

fill muffin cups 3/4 full. the recipe says it makes 18 muffins, but my muffin tin is large enough it makes 12 muffins perfectly. bake at 375 for 25 minutes. let cool before eating.

oatmeal pancakes

1 1/8 cups milk or soymilk
1 cup rolled oats
combine. let sit 5 minutes.

2 T canola oil
2 beaten eggs
add to above

1/2 cup whole wheat pastry flour
1 T brown sugar
1 tsp baking powder
1/4 tsp salt
sprinkle of nutmeg
sprinkle of cinnamon
add dry ingredients to above

use scant 1/4 cup of batter per pancake. makes about 8-10 pancakes.
these deserve real maple syrup...esp warm maple syrup!
