homemade citrus iced tea...divine

squeeze 4 lemons and 2 oranges. set the juice aside.
cut the rinds into small pieces and put them in a big pot.
cover w/ 4 cups of water and simmer 10 minutes til the juice is out of the peels.
add 2 cups of sugar and stir til it's dissolved.
add 4 Tbs of loose tea.
remove the pot from the heat and steep several minutes.
strain. i use a fine mesh metal strainer.
add the orange and lemon juice plus 8 cups of water.

deep chocolate vegan cake

8" pan, oiled and dusted w/ cocoa powder in the bottom
preheat oven 375 degrees

1 1/2 cups whole wheat pastry flour
1/3 cup cocoa powder
1/2 tsp b. soda
1/2 tsp salt
1 cup sugar

mix the above in a medium bowl. then pour in:

1/2 cup canola oil
1 cup cold coffee
2 tsp vanilla
and mix til smooth

add 2 Tbs cider vinegar last, mix in and bake right away for 25-30 minutes.
