whole wheat banana bread

makes one standard loaf (doubles easily)
350 degrees, bake for one hour

mix in a mixing bowl:
1 3/4 cups whole wheat pastry flour
2/3 cup sugar
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt

mix in a separate bowl:
1/3 cup canola oil
2 beaten eggs
3 well-mashed, overly ripe bananas

combine the two mixtures, then bake.

  2. yes, this is a case of "either we use these bananas immediately and get two loaves of banana bread for our efforts, or we throw all six bananas out." there's incentive for you!
