pumpkin oatmeal cookies

these taste like old-fashioned oatmeal cookies, but with whole wheat pastry flour and pumpkin puree added, they're even healthy for you!

preheat oven to 350 degrees
spray 2 cookie sheets w/ non-stick spray

in a large bowl, mix:

2 cups whole wheat pastry flour
1 1/3 cups old-fashioned oats
1 tsp baking soda
3/4 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg

in a medium bowl, mix:

1 2/3 cups sugar
2/3 cup canola oil
2 Tbs molasses
1 cup pumpkin puree
1 tsp vanilla

add wet ingredients to dry and combine.

fold in:

1 cup pecan pieces (if you live near rooster brothers in ellsworth, substitute their maple-ginger roasted pecans instead...you won't be sorry! just break them into little pieces by hand)
1/2 cup raisins (optional...my friends all say they're perfect without and not to change a thing)

drop by tablespoons, 1" apart on cookie sheet.
bake 16 minutes at 350 degrees. cool slightly before removing from cookie sheets.

    I think the roasted pecans are what makes them so good.
